***HOLIDAY HERB & SPICE ROASTED
CHICKEN***


INGREDIENTS

Whole chicken
1/4 cup butter, soft or melted
1 teaspoon thyme
3/4 teaspoon ground ginger
1 teaspoon paprika
minced garlic- about 1 teaspoon
1/4 cup Worcestershire sauce
1/4 cup orange juice
1/2 bunch of (preferably fresh) cilantro (also known as coriander), washed salt and pepper to taste

This is a very simple recipie, in which the secret lies in the marinade rub. Mix all the ingredients together except for the fresh cilantro, chicken, and butter. Place the chicken in a roasting pan, and place the cilantro inside the chicken.
Rub the chicken all over with the butter, including the crevice between the body and the wings and legs.
Then apply the herb mixture to the whole chicken.

Now it's ready to roast! Usually at a temperature of 350 degrees, the length of time will depend on the size of the chicken, but will average 1.25 to 1.75 hours for, say, a 5-6-pound bird.
