***NEW YEAR'S EVE MERINGUE SNOWFLAKES***

INGREDIENTS
4 Fresh cold egg whites
1 drop Lemon juice
225g Extra fine granulated sugar.

Whip egg whites & juice in a "squeeky" clean stainless steel
bowl on high speed until just foamy.
Add sugar in a slow steady stream & whip until stiff peaks form (about 3-4 mins).
Put meringue into a pastry bag which has been fitted with a plain tip (about 1/2" opening).
Preheat oven to 200F.
Pipe snow flake shapes onto silicone paper lined trays & bake for 2/4 hours until crispy, but white still in colour.
Serve with gourmet coffee or champagne!
